
The chilli pepper is a generic name. It refers to various varieties of berries originating from the West Indies and particularly Jamaica. Introduced in Europe by Christopher Columbus, the pepper is very popular in cooking… But it also seduces perfumers for several years. They use the essences of pepper, delivered by steam distillation of leaves and dried berries that have not yet reached maturity. Its fragrance is warm and spicy of course. It evokes nutmeg and clove with undertones of cinnamon. Noses use it mainly in spicy perfumes to enhance them with a nice olfactory complexity.
