Coconut

The coconut is the fruit of the coconut palm, a tropical tree that belongs to the palm family. This exotic fruit has a smooth skin green or orange when is unripe. After a germination period of 4 to 10 months, the coconut is covered with a thick, brown and fibrous layer that contains the edible part of the fruit, the almond. Its sweet and refreshing side is very appreciated in gastronomy but also in perfumery. Its milky and sunny scent brings an exotic dimension to a fragrance. To give this sunny character, perfumers can use gamma-nonalactone, a lactone naturally present in the fruit. The gourmand notes this ingredient are in the middle note of ippi patchouli to give it a sweet, floral aspect.
