
Dulce de leche is an addictive sweet also known as milk jam. Like the tarte tatin, this delicacy is the result of a mistake! It would have been created in the 19th century by a military cook who simply forgot a pan of sweetened milk on the fire. The mixture then thickened and concentrated, to become a creamy paste… delicious! In perfumery, the use of dulce de leche is quite recent. Its rich and caramelized smell is reproduced thanks to synthetic chemistry. It is a note that can be found in gourmand perfumes.
