Vanillin

Vanillin is a very popular ingredient for perfumers which comes from vanilla. This molecule was first extracted by the chemist Theodore Nicolas Golby who macerated pods in alcohol. It is also possible to recreate this aromatic molecule artificially through synthesis. It is now possible to create vanillin from several synthetic compounds. Thanks to these advances, the gourmand and spicy smell of vanilla has been democratized in perfumery. Moreover, vanillin is much more often found in fragrances than natural vanilla absolute because of its cost.
